This intensive program equips participants with the skills and knowledge to create visually stunning and delicious cream cakes.


Course Modules

1. Theory: Raw Material and Equipment

  • Understanding essential ingredients for baking and decorating.
  • Overview of equipment and tools required for professional cake decoration.

2. Baking Techniques

  • Tea Cakes: Domestic and commercial preparation methods.
  • Desserts: Master mousse, Neapolitan, rum balls, cupcakes, muffins, cakesicles, and pudding.

3. Filling and Frosting

  • Crafting delicious fillings for cakes.
  • Preparing different types of frostings to enhance flavor and appearance.

4. Pastry Sponge Mastery

  • Techniques for creating soft and moist sponges for domestic and commercial use.

5. Cake Masking & Shaping

  • Techniques for smooth and flawless masking.
  • 2D Cakes: Perfect for creative flat designs.
  • 3D Cakes: Learn doll cakes, rose cakes, and fancy glazed cakes.
  • Shaped Cakes: Work on square, heart, and other creative designs.

6. Specialty Cakes

  • Photo Cake: Learn to print and apply edible images.
  • Wedding Cakes: Elegant and professional multi-tier designs.

7. Creative Decoration Skills

  • Piping Techniques: Develop intricate and precise piping skills.
  • Air Gun Techniques: Create unique designs using airbrushing.
  • Clay Art: Add personalized and handcrafted decorations.
  • Stencils: Use stenciling techniques for elegant patterns.
  • Chocolate Garnishing: Craft beautiful chocolate-based decorations.

8. Business Skills

  • Marketing your cake business.
  • Understanding customer preferences and trends.
  • Storage and supply chain management.
  • Menu preparation and pricing strategies.

Assessment

  • Written Test: Evaluate theoretical knowledge.
  • Assignments: Practical tasks to demonstrate mastery.
  • Viva: Oral examination to assess understanding and creativity.

Certification

Participants who complete the program successfully will receive a certificate of accomplishment.
