Overview:

To launch a career in the bakery and pastry industry, one needs to be creative, patient, hardworking and passionate. You can opt for a wide range of career paths in this highly desired, specialised field. As the only pastry school in Coimbatore, our student centered curriculum offers the full spectrum of training to gain the necessary skills to become a pastry chef in a commercial kitchen, launch your own bakery/patisserie business or extend your culinary skills.

You will be taught the relevant theory to understand the underlying science and techniques, and benefit from  Masterclass Demonstrations. Being innovative and having a sound knowledge about every ingredient is essential to becoming a specialty chef. This is a practical course and you will be learning by 'doing' and perfecting your craft. With our expert guidance, you will be inspired to bring out the best in you. Students will develop fine motor skills and hand-eye coordination through continuous practice. Every student will complete worksheets to acquire the essential math skills needed to minimise wastage during production. Students will engage in the in-house facility and gain first-hand knowledge about customers' needs and developing special menus.

Highlights:

INTERGRATED THEORY MODULE

Baking is all about understanding the science behind each process. All modules consist of practical sessions, theory sessions and end with a formal assessment in both theory and practical.

 

CONTINUOUS ASSESSMENT

At Lathas, a typical week starts with training and ends with assignment, project and assessment pertaining to the topics learnt. This process helps our students to implement their knowledge as well as encourages them to create a portfolio of their own, based on which, they are graded.

 

BAKERY MANAGEMENT

To become an entrepreneur one needs to develop varied set of skills. Our diploma students gain real time experience in the in-house bakery and patisserie, right from menu planning to interacting with customers.

 

INDUSTRY SENSITIZING

Our training equips the students with all essential skills to confidently work in high end pastry kitchens or start their own establishments. We assist our students to secure internships and placements on successful completion of the course.


Enrolment procedure

Timing:  10:30 am - 5pm
Duration:  6 months
The Diploma in Bakery & Pastry Arts course happens twice a year. Once in April and the other in October. We intentionally keep the batch size small to ensure that each student benefits from individual learning support. Seats are filed on first come first serve basis.
 

STEP 1: REQUEST AN APPLICATION

STEP 2: SUBMISSION & ENROLMENT

You'll need to print the application & fill it up completely. Please ensure that you have not missed out on any section. You can either submit the form physically in the academy or courier it to us, along with photocopies of necessary documents and the booking advance. After receipt of this, your seat will be officially blocked.

 

STEP 3: REMITTANCE OF COURSE FEE

To facilitate ease of payment, the course fee is divided into two parts. On receipt of the first part of the course fee we process material requirements for you. The remaining amount is to be remitted before the course commences.

Fee structure

The fee includes course fee, training materials, personalised tool kit, Uniforms, Field visit, and special guest sessions.
​An additional fee of Rs.40,000/- has to be paid separately if you opt to write the City & Guilds certification exam.
​Booking advance: Rs. 40,000/ =  (To be remitted during the submission of completed application).

Diploma in Bakery and Pastry arts is full-time, with intensivepracrical training. This is one of the reasons why we will be able to cover a wide range of topics in a short duration. Students will spend five days a week, from monday to wednesday (9am - 5 pm) for practical training and the other days to complete the practice work, assignments, projects and weekly assessments. Theory sessions will also be accomodated along this schedule.

however, After the first term students may have to attend special events during weekends which will be hosted by them.

This course is suitable for amateurs but prior knowledge, research, and passion in this field will be helpful to reach higher goals
