CREAM CAKE DECORATING COURSE 2-WEEK PROGRAM-

  • Theory - about raw material and equipment

  • Tea cakes – domestic and commercial
  • Dessert - mousse, Neapolitan, rum ball, cupcake, and muffins, cake sickle, pudding.
  • Filling and frosting-making.
  • Pastry sponge- domestic and commercial.
  • Masking of cake – 2d cakes, 3d cakes- doll cakes, rose cake, fancy glaze cakes, shaped cakes- square, heart.
  • Photo cake
  • Piping skill
  • Air gun technique
  • Clay art
  • Stencils
  • Chocolate garnishing
  • Wedding cake
  • Marketing, costumer understanding, storage & supply, menu preparation.
  • Written test
  • Assignment

Timing: 10:30AM to 5:30PM (4 days in week)
